Yesterday afternoon, Janna made me thin out my collection of cookbooks.  She said something about never making certain kinds of food, which got me thinking, what is something that Janna will never want to eat?

Gumbo.

My friend Benny is from Louisiana and has an appetite that matches my own.  We’re goin’ on a date to stock up on okra, crawfish and filé powder.  It’s gonna be good, I guarantee.

I had an awesome deal fall through this afternoon.  Ugh.  

All is not lost, I could totally forget about it if I were to have this for dinner:

Orecchiette tossed in a light oil with artichokes, sauteed mushrooms and local ingredients.

There is absolutely no substitute for the best. Good food cannot be made of inferior ingredients masked with high flavor. It is true thrift to use the best ingredients available and to waste nothing.
